In my previous blog post, I posted a Strawberry Jam recipe, so now time for another recipe with these yummy Strawberries. Making your own eggless strawberry ice cream with fresh ripe fruits at home is easy. You know exactly what goes into the ice cream and you will also have a control of the portion sizes if you follow this method.

This Eggless Strawberry Ice Cream Recipe is full fat and made without gelatin and has very few ingredients. The ingredients are easily available either in your store cupboard or fridge. You can easily adapt this recipe to other berries or fruits too.

Eggless and Gelatin free Ice Cream Recipes

Since we are strict vegetarians, we rarely ever eat ice creams outside of home. I am constantly looking at the labels and the ingredient list. Often the choices are very limited and picky that I am I usually end up not eating any. I much prefer homemade ice creams due to the quality organic ingredients I use in addition to making them without the use of eggs or gelatin.

I have modified my ice cream recipes to make it full fat double cream and used fresh fruit puree. There are different ways to make Ice cream, Nowadays we can make ice creams easily at home with a inexpensive electric ice cream maker. I have one such simple ice cream maker from Philips since 17 years. Before I had this machine I had to keep mixing the ice cream every hour till it froze. Now we have a tasty ice cream within 30 minutes with very little effort and very few ingredients. More over the texture comes out perfect with this machine.

Importance of Portion Sizes

Everything in moderation is my motto for everything in life. Even if this Eggless Strawberry Ice cream is the tasty and homemade, I always limit the quantity to portion sizes. I usually make around 1 liter of any ice cream recipe. Then divide it into many smaller portions to defrost easily and consume quickly. To make this feasible, while making the ice cream in the ice cream maker, I don’t finish the process fully, but take it out earlier to fill into Popsicle forms. I have the ideal portion size of 60 ml of ice cream in each Popsicle form. This is enough to satisfy the craving for once in while.

Since ice cream is rich in fat and sugar, its best to stick to the small portion sizes and reserve it as an occasional treat. Its also not good to defrost larger tubs and take out a little at a time and then re freeze again. So more than a decade back I invested in high quality and leak proof Tupperware Ice lolly forms. That way when my child wants an ice cream I can easily limit the portion size.

Recipe for Eggless Strawberry Ice Cream

Now lets dive into this yummy Full fat Eggless Strawberry Ice recipe without the use of eggs or gelatin.

Ingredients:

300 gm washed Strawberries with stalks removed

100 gm powdered sugar

180 ml full fat double cream

150 gm full fat yogurt

1 tbsp of lemon juice

Method

Puree the strawberries with lemon juice and sugar.

Pass them through the sieve and reserve a small portion of the seeds for mixing in later. Whip the cream.

Mix in the yogurt and the fruit puree into the whipped cream.

Pour it into the ice cream maker till you get the desired consistency.

If you want to use the Tupperware Ice lollies form to make portion sizes, then, take it out in semi-liquid consistency. Fill into the forms and freeze immediately. Alternatively, you can finish it off in the ice cream maker and serve immediately.

Tip

If you want to substitute refined sugar you can do so. But the taste is not guaranteed. What I usually did was added 50 % of castor sugar and 50% of unrefined sugar. Other options would be Agaven Syrup which is neutral in taste. But sugar is sugar, better to have it for an occasional treat and not be so austere always. Once in a way good to enjoy life also.

Ingredients
