Swiss Chard Recipe -South Indian Style

In this blog post I will be writing about how to prepare a tasty Recipe with Swiss Chard South Indian style. Swiss chard is a member of the beet family and is also known assilver beet and perpetual spinach, and they come in a variety of colors. You’ll find stems ranging from bright yellow and orange to red, purplish and even pink hues. Chard is in season from July to November.

Nutrition value of Chard

Swiss chard is rich in calcium, potassium, magnesium, vitamin A and vitamin C. Chard is loaded with fiber and iron, which make this leafy green a nutritional powerhouse.

This vegetable in a natural immune booster and may contribute to lower blood pressure and stronger bones. Chard can be harvested when the leaves are young and tender, or after maturity when they have larger and have slightly tougher stems. Whenever you harvest the chard, the taste depends very much on the recipes. I have a different way of cooking chard which we will now dive into.

Best way to Cook Swiss Chard

I used to hate to eat Swiss Chard and dreaded buying them before I had my garden producing them. When I started to harvest them in my garden was when my quest to cook it tasty began. I started to research on how to cook them the right way to remove the bitter taste from Swiss Chard. The bitter taste is because of the oxalates in Chard. I followed this method and it was an immediate hit in our home.

The method is similar to some of the vegetables we cook in India. Basically you cook the chopped chard for about 2-3 minutes in a large quantity of boiling water. After that you have to discard the water. After that you season the chard as per your taste. I tried to follow the healthiest way to cook Swiss Chard method and it worked. The bitterness was gone and I started to season the chard South Indian style. I have never looked back ever since. By cooking like this my husband and I have come to love this dish and the Chard. I used to make Swiss chard with freshly prepared Paneer, its also a tasty prep.

South Indian Style Swiss Chard Recipe

Ingredients

400 gm Swiss Chard any color washed and chopped
Coconut Oil 1 table spoon
1 teaspoon of split Urad dhal
1 table spoon of channa dhal
2 dried red chilies
2 cloves of garlic (optional)
1 medium sized onion chopped finely
a pinch of asafoetida
1 tsp of black mustard seeds
1 tsp of salt
2-3 tblsp of freshly grated coconut or desiccated one will also work
a few cilantro leaves for the garnish.

Method

In a pot boil water and add in the chopped Swiss Chard leaves with the stem.

Cook the Chard leaves for 3 minutes and then drain out the water.

Heat a heavy bottom pan on medium heat and add in the coconut oil.

Roast the dhals then add in the mustard seeds to splutter, asafoetida and the red chillies.

Add in the garlic cloves and saute it shortly before adding the chopped onions. Saute it for about a minute and then add in the cooked Swiss Chard.

Cook down all the remaining water. Add the salt and the desiccated coconut, stir in shortly and remove from heat.

Ingredients
