Rhubarb Mixed Fruit Chutney

Rhubarb mixed fruit chutney is a great combination of tastes namely tart and the sweet taste. The tart taste of Rhubarb when combined with over ripe sweet fruits makes this chutney an ideal side dish.

I have been making this yummy Rhubarb mixed fruit chutney for some time, as a result of the high yield we have during the rhubarb season. I usually serve the chutney as a side dish for Rice and Indian lentil soup. This chutney also pairs well with Indian flat bread also known as Roti.

Rhubarb has a strong tart taste. Remember that only the stalks are edible. Because the leaves and the roots are high in oxalates, we cut out the leaves during harvest. The stalks are then good to enjoy in the many dishes.

For the simple reason that I don’t want to have too much sugar in our diet, I use very ripe sweet fruits to reduce sugar in this recipe. Most of the sweetness is got from the sweet fruits. Even if you are vegan, you can make this chutney by omitting the ghee. Since some oils have a strong taste, my choice of oil would be vegan butter or coconut oil for this recipe.

Furthermore, this chutney recipe is very versatile and can be adapted for any fruit of your choice. This recipe is also a good way to use up all those over ripe fruits lurking on your kitchen counter. Especially those ripe bananas which no one wants to eat. 

HOW TO MAKE RHUBARB MIXED FRUIT CHUTNEY

Rhubarb mixed fruit chutney

INGREDIENTS FOR RHUBARB MIXED FRUIT CHUTNEY

3 stalks of Rhubarb chopped
Fruits of your choice all diced into cubes.
1 stick of ginger
2 sticks of cinnamon sticks
1 tsp of ghee
3- 4 tea spoons of brown sugar or jaggery

METHOD

Heat a heavy bottom pot on medium heat and add the ghee and the spices.
Mix in all the fruits and a little water.
Cover the pot and cook for about 10 min.
Add in the sugar, stir and cook for 5 min. Serve hot.

VARIATIONS OF THIS CHUTNEY

In case you don’t have rhubarb at your disposal, you can vary this recipe with other fruits. I usually use bananas, apples, pears, plums or peaches. Almost all fruits, except berries, or fruits with a lot of water content. Because I want quick cooking time, I avoid watery fruits.
