Homemade Applesauce using Kitchenaid foodstrainer

Homemade applesauce using Kitchenaid food strainer attachment is easy to make.  I will show you how its made in this tutorial.  I will be using simple home canning techniques. We were lucky to pick fresh organic apples ourselves straight from the tree opposite to our house end of August this year.

The tree was in common land and most were hesitant to pick consequently we were infested with wasps due to the rotting apples on the ground. Therefore some of the families in the neighbourhood went to pick some. We had a big ladder and were in the closest proximity to the tree hence we probably picked the most. Almost 2 crates of it.

Our cellar is not too cold during the summer months as a result the apples were not as crispy anymore. Rather than let them rot, we decided to make Homemade applesauce using Kitchenaid foodstrainer equipment thereby preserving them without too much elbow grease.

There are at least 2 ways to make homemade applesauce

  1. Cook the apples without peeling and pass through a food mill to make a puree.
  2. Peel, core and cook the apples and consequently mash it in a blender or a food mill.

For smaller quantities you can use a normal food mill operated by hand. We used the kitchen aid food strainer attachment to give our elbows a little rest because we had a huge quantity of apples. The principle is the same as for any canning.

Equipment you will need for making applesauce

KITCHENAID FOODSTRAINER ATTACHMENT OR A FOODMILL

CANNING EQUIPMENT ( upcycled glass jars, big pot for boiling the jars)

Ingredients:

Apples of any variety ( I used 8 Kgs of apples)

Juice of 3 or 4 Lemon

Method :

Wash the apples and quarter them. You don’t need to core them.

Cook them with enough water to cover the apples. Strain the apples and you can drink this sweet apple water.

I cooled this water and stored them in the refrigerator and we drank them for about a week.

Pass all the cooked apples into a food mill ( or in this case a Kitchenaid food strainer attachment ) to remove the skin and the seeds. ( We love our Kitchen gadgets at the Swiss home.)

Since the sauce was cold by the time we were finished with the processing. Therefore, I had to heat the apple sauce with a little lemon juice before canning them. Lemon juice will prevent the sauce from turning brown.

You can add some sugar and cinnamon if you wish at this stage before filling.

Fill the glass jars using a stainless steel funnel leaving about 2 cm gap and wipe the excess off around the rims.

Canning Homemade applesauce

Close them tightly and place all the filled jars in a hot water bath. Boil them for 20 minutes.

Lift them gently and place them on a wooden board for 24 hours. This trick is to avoid the jars from cracking when it comes in contact with a cold surface.

During that time you will hear the jars popping in and see a dent on the lid in a down position. This is an indication that the jars have sealed well.

Check to make sure they are sealed by pressing on the lid to see if it pops. If the jars makes a sound when you press it,  it is an indication that the jars have not sealed well. If it is tight and sealed down you are good to go!

You can store homemade applesauce without refrigerating for a year.

You can use homemade applesauce for in baking, in porridge, baby food and desserts. This is a no sugar applesauce recipe, so you may have to vary the recipe if used for baking or in desserts.
