This year our Strawberry harvest was delayed by a couple of weeks. But oh boy we had a great harvest. After freezing some of it, and eating quite a lot all by myself, I still had so much left with me. One of the ways to preserve fruits without relying on freezers is by making Jams and jellies. This Easy Fresh Strawberry Jam Recipe just uses only 2 ingredients and its that delicious.
Jams or Fruit Preserves
Fruit preserves are preparations of fruits, vegetables and sugar, often stored in glass jam jars. In this Blog I have already posted a few Jam recipes like Red Currant Jam, Rhubarb Ginger Confiture, Sea Buck Thorn Preserves, all of which were made from scratch from our garden produce. Without further ado, lets jump into this very Easy Fresh Strawberry Jam Recipe.

Easy Fresh Strawberry Jam Recipe
Ingredients
1 kg of Strawberries the stalks and washing
500 gm of Jam sugar (Proportion of sugar to fruit 1:2)
Sterilized empty Jam Jars
Funnel for filling
Kitchen Towels and an wooden board
Method
Mix all the ingredients into a heavy bottom pot and set it on medium heat.
After all the sugar has melted the fruit will start cooking.
After about 20 min. or so the fruit puree will start thickening. Because strawberry has a high content of water, it will take a little longer depending on the quantity.
Reduce the heat but continue stirring and cooking the fruit to avoid burning and to attain an even consistency.
Keep stirring for another 10 minutes again this will depend on the amount of fruit you have.
How to test if the Jam is ready for bottling
Add a few drops to a clean plate and tilt the plate slightly. If the jam flows then its not yet ready.
Repeat the process till the jam stops flowing. Now its ready for bottling.
Bottling Process
Switch off the heat. And set all the sterilized jars on a tea towel.
Using tea towels or wooden board will help in preventing the jam jars from cracking while filling the hot jam.
Fill the jars to the brim and close the lid tightly. Turn the jars upside down on the tea towel for about 10 min.
Turn them back with the lid facing up. This is such simple trick but, this is what helps in creating a vacuum and will preserve the jam for long.
These Jams preserve well if done under sterile conditions and if the recipe is followed. Once you open a jar, store the opened jar in the refrigerator.
