Medu Vada recipe using Ultra Fastgrind

It is festival season and the festivals are on full swing in the Indian Sub-Continent. No festival is complete without Medu Vada. Vada is a must for most of the South Indian Hindu festivals. So, I thought I will kick off my blog post with this all time favorite recipe. I have already shared in an earlier blog post  another favorite South Indian breakfast Idly Recipe. Vada is a great combination with Idly. I will also be briefly touching on how to grind for Medu Vada using Ultra Fastgrind Wet Grinder .

What is Medu Vada ?

Medu Vada or Urad Vada is a South Indian fritter made from black lentils or also called Urad dhal. It is usually made in a doughnut shape, with a crispy exterior and soft interior. This snack is very popular in South India and now its fame has reached other parts of the globe.

Medu Vada Using Ultra Fastgrind Wet Grinder

For sometime now, I have started grinding Vada batter using a wet grinder. The batter texture and consistency which comes out of the wet grinder is the best. When you grind with a mixer, you tend to add more water due to the vacuum which will be created when you grind Urad lentils. Often I don’t get the consistency right and tend to add too much water that I end up with a liquid batter.

Because of all the above mentioned problems, I switched to grinding the lentils with the wet grinder and the vadas come out just perfect. When you use a wet grinder for grinding the vada batter, you will use less water. Because of the lower water content, you will get the added benefit of less oily vadas. Too much deep fried food as you already know is not very good for our overall health.

As for any wet grinding, you will need to soak the grains first. I usually tend to soak them for more than 8 hours. Preferably overnight. I do this because by soaking them longer, I can grind them quicker. I also change the water a couple of times during soaking. This will omit or reduce the Phytic acid content in the lentils or grains which makes foods rich in phytic acid easier to digest.

Word of Warning

Due to the fact that Vadas are deep fried in hot oil please limit your intake. And, we know deep fried food is not suitable for a healthy diet. That is the reason why I limit deep fried foods in our kitchen. The only exception I make is for festivals.

Ingredients

Ingredients for Vada recipe

1 Cup Soaked Urad dhal
3 tblsp of finely chopped coconut pieces
1.5 tsp of whole black pepper
1.5 tsp of salt
2 cm stick of ginger
2 green chilies
a pinch of asafoetida
oil for frying
a few curry leaves
and coriander leaves
Oil for frying

Method

Soak the dhal for about 3 to 4 hours or until well soaked.
Grind the soaked dhal with a little water using the Ultra Fastgrind wet grinder.

Use Rice / Dhal program.

Depending on the quantity you can set the timer. I set the time to 10 minutes but in reality the lentils were ground in less than that time because I soaked them overnight.

After the dhal is ground to a thick paste mix in all the seasonings and make doughnut shapes and fry in hot oil.
Fry until they are golden brown and serve with Chutney.

Vadas taste great with coffee and teas too. You can also omit the chutney if you want.

Ingredients

Medu Vada is an easy snack that can fill your tummy and heart completely. Crushed pepper adds a unique flavour to the Medu Vada. It is nice that you have shared this recipe here. I would have loved it if you shared some exquisite chutney recipes too to go with it.

Crushed pepper definitely adds to the taste, only problem is small kids who will not eat it here at home. I already posted a chutney recipe last year. I Will share more reipes in the future.
